Mosimann’s at The Relais

Guests at The Salon event at The Relais Henley hotel on Wednesday evening enjoyed a cooking demonstration and a taste of one of Mosimann’s signature dishes Risotto ai Funghi cooked by Mosimann’s Consultant, Chef Ray Neve and The Relais Head Chef Andrius Barauskas.

The Relais Henley owner, Grace Leo welcomed guests to the Moismann’s sponsored event.  She said, “Many of you know that we have launched a private members’ club to work in these beautiful surroundings in The Palm Court and to join us for an exciting programme of events; breakfasts and social evening events like this one this evening.  Our Clipper restaurant features many of Mossimann’s signature dishes.”

Grace then introduced Mark Mosimann who spoke about the history of Mosimann’s Club and his Chef father, Anton who was the first chef to obtain two Michelin stars at a hotel outside of France.  Mark and his brother James joined the business 15 years ago and in addition to the Club in Belgravia it now has an international catering arm providing hospitality all over the world.  Mark said, “The partnership with The Relais Henley is a great addition to our business.”

Guests were then treated to the secrets behind the mushroom risotto recipe by Mark. The recipe uses no butter, the cream is whipped before adding to make it light and fluffy plus plenty of truffle oil (Mark commented there’s “never too much truffle oil”) and at the end some Mosimann’s champagne.  The rich, light creamy risotto was delicious and was served with Mosimann’s pink champagne and Chablis wine.
